Apple Sausage Corn Baked Pancakes

Breakfast casserole starts with a muffin mix, and combines the fab flavors of apples, onions and sausage.

Breakfast sausage, cooked, diced

Diced apples, canned in water, drained

Red onions, diced

Sage, ground

  1. Whisk eggs and water together in mixing bowl until combined.
  2. Add muffin mix and whisk until batter is blended and smooth.
  3. Fold in sausage, apple pieces, onions, and sage using rubber spatula. DO NOT OVERMIX.
  4. Deposit 1 lb 4 oz (approx. 2 1/2 cups) batter into 9 greased 8-inch round cake pans.
  5. Bake as directed below and serve warm.
