All the rich and heavenly flavors of red velvet cake with cream cheese icing are stacked up in a shot-glass dessert.

Batter
  1. Add water, cake mix and food coloring to mixer bowl fitted with paddle attachment.
  2. Combine on low speed; stop mixer and scrape sides.
  3. Mix on medium speed 2-3 minutes until well combined; pour into greased or parchment-lined half sheet pan.
  4. Bake as directed below and cool; for better handling freeze cakes.

*Rotate pans baked in convection oven one-half turn (180°) after 13 minutes of baking.
Icing
  1. Mix cream cheese in mixer bowl fitted with paddle attachment on medium speed for 2 minutes.
  2. Stop mixer, scrape bowl and paddle; add icing and vanilla extract.
  3. Mix until well-combined.
Assembly
  1. Cut cake into 1/4-inch cubes.
  2. Pipe 0.5 oz frosting mixture into bottom of 4 oz shot glass or disposable glassware.
  3. Place 1 oz cake cubes (approx. 16) on top.
  4. Pipe rosette (approx. 0.5 oz) of frosting mixture on top to finish. Refrigerate until serving.
