Pizza Expo Kick-off
At the Las Vegas Convention Center, the Pizza Expo 2022 began Monday, March 22nd. Our Doughminators had the opportunity to greet thousands of attendees from independent and chain pizza restaurants worldwide.
It’s always so exciting to interact with first-time operators. We couldn’t wait to arm them with the skills and knowledge necessary to create signature crusts and prevent crust-astrophes during the free Pizza Crust Boot Camp the next day.
Pizza Crust Boot Camp
Tuesday morning kicked off with the first Pizza Crust Boot Camp of the event. The Doughminators presented this well-known seminar that has been helping operators for over two decades!

Our Doughminators lead two sessions on Tuesday and Wednesday. The morning session focused on technical aspects of dough, including:
- basic dough formation
- The interfunctionality of ingredients
- applications of specialty ingredients
The afternoon session focused on practical dough handling, including:
- The dough-making process
- Various dough-processing methods
- How to make “emergency” dough
Our favorite part came next, connecting with operators from across the country. Doughminators and General Mills dough experts chatted one-on-one with operators who had flour questions or dough-related dilemmas.

Dough Demos at Our Booth
The General Mills booth was buzzing with all things flour—from The Doughminators helping select the right flour for your signature crust to the Flour Sales team highlighting regional trends and where to purchase General Mills products. Hourly appearances by the Pillsbury™ Doughboy and fun giveaways added to the booth excitement for both consumers and General Mills staff.
Twice a day, our Doughminators performed crowd-pleasing demonstrations of the processes taught in our Pizza Bootcamps and examples of how to troubleshoot common dough issues.

The Flour Trends that are on top for 2022
So, what was the most popular topic of discussion at our booth? The trend of untreated (unbleached) flour and how switching to untreated flour will affect your dough. In this era of ingredient simplification, we see this “clean label” flour trend continuing to rise.
There was also a lot of buzz about our latest untreated flour offering—Di Prim’ Ordine Farina. This Neapolitan “00-style flour is available in operator-friendly 27.5-pound bags. Attendees witnessed the new flour in action during several of our live demos.
