Apple Pie Whole Grain-Rich Coffee Cake

All the flavors of apple pie, from tart apples to spicy cinnamon are here! Bake them together in a whole-grain coffee cake with a yummy glaze.

Coffee Cake Batter

Sliced apples, canned in water, drained

Applesauce

Cinnamon, ground
2 Tbsp
Ginger, dried, ground

Nutmeg, ground
1 tsp
Allspice, ground
1/2 tsp
Yogurt Glaze
INGREDIENT

Water, cool approx. 72°F

Streusel Topping
  1. Pour mix and spices into mixing bowl; add applesauce and oats.
  2. Mix using a rubber spatula to combine (mixture should be crumbly); set aside.
Batter
  1. Dice the apples and set aside for a later step.
  2. Pour water and applesauce into mixing bowl; add muffin mix and spices.
  3. Mix using a rubber spatula until blended; fold diced apples into batter. DO NOT overmix.
  4. Deposit batter (4 lb 4.5 oz per pan) into each of 2, greased, 12 x 20 x 2 1/2 inch hotel pans.
  5. Distribute streusel topping (12 oz per pan) evenly onto batter in each pan.
  6. Bake as directed below and allow to cool completely before topping with Yogurt Glaze.

*Rotate pans baked in convection oven one-half turn (180°) after 10 minutes of baking.
Yogurt Glaze
  1. Whisk together yogurt and cinnamon in a mixing bowl; add water, whisking until smooth.
  2. Drizzle glaze on completely cooled coffee cake and serve immediately.

  • Serving cake later? Hold glaze separately under refrigeration and glaze just before serving.
