  1. Whisk egg yolks, melted butter, and milk in large bowl until well-combined.
  2. Add pancake mix to egg mixture and whisk until combined.
  3. Add coconut, pineapple, pineapple juice, siracha sauce, and coconut extract to pancake batter.
  4. Add egg whites to mixing bowl and whisk on high speed until stiff peaks form, approx. 4-5 minutes.
  5. Fold egg whites into pancake batter. Deposit batter using a #40 scoop into small heavily greased mini muffin tin.
  6. Top muffin tin with one greased sheet of parchment paper.
  7. Cover muffin tin with sheet pan to prevent parchment paper from blowing away in oven.
  8. Bake as directed below until golden brown.
