Prep
  1. Mix coconut milk and whole milk in large bowl; refrigerate until needed.
  2. Combine rice flour and baking powder in separate bowl; set aside.
Batter
  1. Add softened butter, granulated sugar and brown sugar to bowl of mixer fitted with paddle attachment.
  2. Mix on medium speed for 2 minutes, then add eggs and mix on low speed an additional minute.
  3. Add in milk mixture and vanilla; mix on low speed 1 minute then stop and scrape edges of bowl.
  4. Add flour mixture; mix on low speed for 1 minute until combined and scrape bowl and paddle again.
  5. Add coconut flakes and mix for 30 seconds or until just combined; pour into greased half sheet pan.
  6. Bake as directed below until top is golden brown; allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 15 minutes of baking.
