Collard greens, prepared, held warm

Prep
  1. Thaw biscuit pucks covered, either 30 minutes at room temperature or overnight under refrigeration.
Spicy Syrup
  1. Stir together maple syrup, red pepper flakes and hot sauce in a small mixing bowl; set aside.
Lobster
  1. Whisk together flour, cornstarch, salt, pepper, garlic powder, onion powder and cayenne pepper in a large sized mixing bowl; set aside.
  2. Whisk together buttermilk, eggs and hot sauce in a medium sized mixing bowl; set aside.
  3. Dredge each lobster piece in flour mixture until fully coated and shake off excess.
  4. Dredge in buttermilk mixture, allowing excess to drip off then re-coat in flour mixture, shaking off excess.
  5. Cook in fryer preheated to approx. 350°F for 4-6 minutes until golden brown; keep warm.
Assembly
  1. Place 1 biscuit dough puck onto well-oiled waffle iron, preheated to 375°F; bake 60-90 seconds or until golden brown.
  2. Place waffle on serving plate and top with approx. 1.5 oz (1/4 cup) collard greens and 1 piece of Lobster.
  3. Drizzle 2 tsp Spicy Syrup over top and serve immediately.
