Chilled Tart Cherry Soup

Servings: 9 servings (1 serving = 1 - 4 oz cup)

Ingredients

NAME WEIGHT MEASURE
Tart cherries, pitted, frozen 1 lb 4 cups
Water, cool (approx. 72°F) 1 lb 2 cups
Granulated sugar 6 oz 3/4 cup
Yoplait® Greek Nonfat Plain Yogurt (38414) 12 oz 1 1/2 cups
Salt, kosher 1/4 tsp
Cinnamon, ground

Method

  1. Combine cherries, water and sugar in medium sauce pan.
  2. Heat to low boil, then reduce heat.
  3. Simmer for 10 minutes stirring occasionally; remove from heat and cool completely under refrigeration.
  4. Add cherry mixture, yogurt salt and cinnamon to blender; mix until well combined.
  5. Skim any foam from top for a smooth, attractive appearance; serve cold.
Tip: Garnish with a swirl of thinned yogurt and fresh mint, if desired.
