Chocolate and Dried Cherry Shortbread Cookies

Take a buttery classic shortbread and jazz it up wth dried cherries and semi-sweet chocolate.

Dried cherries

Semi-sweet chocolate chips
7 oz
1 1/8 cups
Butter, unsalted, softened
8 oz
1 cup
Almond Extract
2 tsp
Water, cool approx. 72°F

  1. Rough chop dried cherries and set aside.
  2. Add chocolate chips to bowl of food processor; pulse for approx. 10 seconds until finely chopped.
  3. Add butter and muffin mix to mixer bowl with paddle attachment; mix on low speed for 2 minutes.
  4. Stop mixer, scrape bowl and paddle and add remaining ingredients. Mix on low speed an additional 2 minutes.
  5. Deposit #70 scoop dough on parchment-lined sheet pan in 6 x 8 pattern.
  6. Top with parchment paper; place another sheet pan on top and press firmly until dough is approx. 1/4-inch thick.
  7. Remove extra pan and parchment and bake as directed.
  8. Cool completely and store in airtight container.
