Citrus Chamomile Ice Cream Sandwiches

Whole-leaf citrus-chamomile tea leaves are toasted, ground and added to unique butter cookies. Sandwich ice cream between cookies for a comforting treat.

  1. Pre-heat sauté pan over medium heat; add tea. Toast for 1 minute while constantly moving the pan (if using tea bags, remove from bag for toasting).
  2. Remove from heat and grind in a spice grinder until finely ground.
  3. Add butter, corn muffin mix, corn and ground tea to bowl of mixer fitted with a paddle attachment.
  4. Mix on medium speed for 2-3 minutes or until a dough is formed.
  5. Chill mixed dough for 15-20 minutes; divide into 4 even portions (approx. 15 oz each).
  6. Place 1 dough portion on lightly floured surface and roll into an 11 x 15 inch rectangle.
  7. Using a 2-inch round, fluted cookie cutter, cut out rounds of dough.
  8. Place rounds on a parchment-lined full sheet pan in a 6 x 8 pattern. Repeat for remaining 3 dough portions.

*Rotate pans baked in convection oven one-half turn (180°) after 3 minutes of baking.
Assembly
  1. Turn over half of the completely cooled cookies so they lay flat side up.
  2. Scoop vanilla ice cream, using #40 scoop, and place on the flat side of each flipped cookie.
  3. Top with remaining cookies pressing lightly to make sandwiches; freeze until ready to serve.
