  1. Spread coconut out on parchment-lined half sheet pan.
  2. Bake at 300°F for 3-5 minutes until golden brown; set aside.
Batter
  1. Add 1 1/4 cups water and cake mix to mixer bowl fitted with paddle attachment; mix on medium speed for 30 seconds.
  2. Add remaining water slowly while mixing on low speed.
  3. Add sweetened condensed milk and coconut; mix on medium speed for 2 minutes.
  4. Deposit #8 scoop of batter in greased or paper-lined jumbo cupcake pans.
  5. Bake as directed below and cool in pan 5 minutes; place on cooling rack to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 9 minutes of baking.
Finishing
  1. Mix icing and coconut extract in bowl until well blended; frost each cupcake with approx. 1 oz.
  2. Dip tops into toasted coconut and serve.
