A decadent, irresistible holiday dessert tops each layer of cake with praline pieces and a creamy eggnog mousse.

Cake Mixture

Eggnog Mousse
INGREDIENT

Heavy cream

Instant pudding mix, vanilla

1 cup
Nutmeg, ground
1 Tbsp
Rum extract
2 Tbsp
Batter
  1. Pour half of the water and 2 Tbsp rum extract into mixer bowl with paddle attachment.
  2. Add entire amount of cake mix and nutmeg. Mix on medium speed 2 minutes.
  3. Add remaining water slowly while mixing on low speed.
  4. Stop mixer, scrape bowl and paddle. Mix batter on low speed 2 minutes. Do not overmix.
  5. Pour approx. 4 lb 5 oz of batter into each of 2 parchment-lined full sheet pans.
  6. Bake as directed below; allow to cool and freeze until firm, approx. 1 hour.

*Rotate pans baked in convection oven one-half turn (180°) after 6 minutes of baking.
Pralines
  1. Place water and sugar in a saucepan over medium-high heat.
  2. Stir sugar occasionally until sugar melts and turns golden brown (8-10 minutes).
  3. Remove from heat. Add almonds and stir quickly into sugar until well coated.
  4. Spread mixture onto greased sheet pan. Cool completely.
  5. Break praline into small pieces; place into food processor and pulse until finely ground. Set aside.
Eggnog Mousse
  1. Whisk cream, pudding mix, nutmeg and rum extract in mixer bowl using whisk attachment on medium speed until medium peaks form (approx. 6 minutes).
  2. Stop mixer, scrape bowl and paddle.
  3. Add vanilla icing. Mix on medium speed until fully combined.
Assembly
  1. Place a cake frame over the first cake layer; spread on 3 lb of mousse filling evenly.
  2. Sprinkle 1.5 lb of ground pralines over mousse.
  3. Invert second sheet cake and spread remaining mousse over top.
  4. Sprinkle on remaining praline; freeze 2 hours or overnight before slicing.
