Jumbo soft, cakey cookies are rainbow-sprinkled, and work as the top and bottom of a creamy filled sandwich.

Whoopie Cake Base

Batter
  1. Place all ingredients for the base into a mixing bowl; stir with a wire whisk until batter is smooth.
  2. Deposit batter using a # 40 scoop onto greased or parchment-lined sheet pan in a 4x6 pattern.
  3. Evenly deposit 1/4 tsp of sprinkles on each cookie.
  4. Bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Filling
  1. Place cream cheese in mixer bowl fitted with paddle attachment and cream on medium speed for 2 minutes.
  2. Stop mixer, scrape bowl and paddle. Add vanilla icing and vanilla extract to mixer.
  3. Mix on low speed for 2 minutes. Stop mixer, scrape bowl and paddle.
  4. Mix and additional 1 minute on low.
Assembly
  1. Turn half of the completely cooled whoopies on the pan over, so they lay flat side up.
  2. Deposit filling, using a #40 scoop, onto the flat side of the whoopie.
  3. Top the whoopies by placing the remaining 1/2 of bases, flat-side down, on top of filling, pressing lightly to form sandwiches.
