Sweet roasted peppers are a great match for cool, creamy yogurt in a veggie-packed comfort food favorite.

Salt-free seasoning, gluten-free

Black pepper

Garlic powder

Gluten-free chicken stock, no salt added

  1. Heat oil in a large stock pot on medium heat and add onions, carrots, peppers and potatoes; sauté for 8 minutes while stirring frequently.
  2. Add sugar, salt-free seasoning, pepper, garlic powder and chicken stock; simmer for 30 minutes.
  3. Blend the soup in batches using blender until very smooth.
  4. Pour blended soup into a large mixing bowl and add yogurt; stir slowly with spatula until combined.
