Greek Feta Tzatziki
  1. Place the feta cheese and olive oil in food processor. Blend until smooth, about 2-3 minutes.
  2. Remove mixture to medium mixing bowl. Stir in remaining ingredients.
  3. Serve immediately or refrigerate until needed.
Lamb
  1. Heat oil in large sauté pan. Add onion and cook stirring occasionally until softened, about 2 to 3 minutes.
  2. Add ground lamb and cook stirring occasionally until cooked through, about 6 minutes.
  3. Drain; add remaining ingredients to meat. Keep warm.
Assembly
  1. Place 2.5 oz pita chips on plate; top with 4 oz Monterey Jack cheese.
  2. Place under broiler or in oven to melt, about 1 to 2 minutes.
  3. Top with 1.5 oz lamb, 0.5 oz lettuce, 1 oz tomato, 1 oz olive, 0.5 oz feta cheese; serve with 3 oz Tzatziki sauce on the side.

  • Tip: Substitute ground beef for the ground lamb if desired; serve tzatziki as a dip for vegetables too.
