King of Rock and Roll Ice Cream Cake

Nutcracker Family Restaurant celebrated 25 years in 2020, a challenging year. The 1950's-style establishment created an anniversary cake worthy of a king -- Elvis, that is, honoring the 1950's home-cooked comfort-food style, also welcomed during the pandemic. The 2020 Neighborhood to Nation contest winner features a Gold Medalâ„¢ Pound Cake Mix, bananas, peanut butter and bacon -- Elvis favorites!

Batter
  1. Combine water and cake mix as directed on package.
  2. Spray 5 (10-inch) springform pans with cooking spray; deposit 20 oz batter into each pan.
  3. Place on full sheet pans and bake as directed below until toothpick inserted in center of each cake comes out clean; cool completely in pan.

*Rotate pans baked in convection oven one-half turn (180°) after 20 minutes of baking.
Assembly
  1. Add icing, peanut butter, marshmallow crème and milk to mixing bowl fitted with paddle attachment; mix on low speed until smooth.
  2. Remove sides from springform pans; slice cakes in half horizontally and set aside top pieces.
  3. Replace sides of pans; spread 4 cups of slightly softened ice cream onto each cake.
  4. Slice bananas thinly and layer the equivalent of 2 bananas over top of ice cream on each cake.
  5. Spread 1 cup icing mixture on each cake over bananas followed by an additional 4 cups softened ice cream.
  6. Replace top of each cake then press down firmly to eliminate air pockets.
  7. Top each with 2 cups icing mixture and sprinkle with crumbled bacon.
  8. Cover and freeze for at least 24 hours.
Service
  1. Remove sides of pan (may need to run a hot knife around sides of pan to loosen).
  2. Cut each cake into 16 wedges using a hot knife; serve immediately.
