Panini-pressed biscuit dough is topped with flaky, seasoned fish, tangy cabbage slaw and spicy coconut yogurt sauce.

White fish, thin fillets

Prep
  1. Thaw biscuit dough covered, either at room temp. 15-30 minutes until flexible or refrigerated overnight.
Spicy Lemon Coconut Sauce
  1. Finely chop garlic and jalapeño together until it makes a paste then transfer to mixing bowl.
  2. Stir in scallions, cilantro, sunflower oil and salt; whisk in coconut milk, yogurt and lemon juice until well-combined.
  3. Cover and refrigerate until needed.
Spice Rub
  1. Stir together chili powder, paprika, granulated garlic, cumin, coriander, Harissa, brown sugar and salt in medium bowl.
  2. Set aside until needed.
Assembly
  1. Cut fish into 3-inch long x 1-inch wide strips; season each with approx. 1/4 tsp Spice Rub.
  2. Pan fry or bake fish as desired; keep warm for service.
  3. Bake thawed biscuit dough 2-3 minutes in panini press preheated to 350°F; place on serving plate.
  4. Top tostada with 2 strips of cooked fish, #30 scoop (0.5 oz) of cole slaw and 2 Tbsp coconut sauce.
