Open Flan with Mascarpone Cream and Fresh Berries

Ingredients

Pillsbury’s Best™ Puff Pastry Dough Sheet (05123) 1 lb 8 oz 2 sheets
Mascarpone Cream
Heavy whipping cream 8 oz 1 cup
Powdered sugar 4 oz 1 cup
Mascarpone cheese 1 lb 2 cups
Assembly
Raspberries, fresh 9 oz 2 cups
Blueberries, fresh 9 oz 1 1/2 cups
Strawberries, fresh, sliced 9 oz 1 1/2 cups
Blackberries, fresh 9 oz 1 1/4 cups
Apricot preserves 4 oz 1/3 cup

Method

Prep
  1. Thaw puff pastry sheet, covered, until flexible; at room temp. 15-30 minutes or refrigerate overnight.
  2. Cut both sheets lengthwise down center; cut 1 rectangle into 6 lengthwise strips.
  3. Dock bottom sides and water wash top halves.
  4. Twist strips approx. 8-10 times and place along long sides of rectangles.
  5. Bake as directed below on parchment-lined sheet pan until golden brown.
Bake
Convection Oven*    350°F      18-23 minutes
Standard Oven         400°F       28-33 minutes
*Rotate pans baked in convection oven one-half turn (180°) after 9 minutes.
Mascarpone Cream
  1. Pour cream into mixer bowl fitted with whisk attachment; beat on high for 2 minutes or until thick.
  2. Add powdered sugar; beat an additional minute or until soft peaks form.
  3. Add mascarpone cheese; beat until thick and smooth.
  4. Reserve 1/2 cup for piping dollops on top.
Assembly
  1. Divide remaining cream onto the 3 baked crusts (approx. 7 oz each); spread evenly.
  2. Top with 3 oz each of raspberries, blueberries, strawberries and blackberries.
  3. Microwave preserves for 30 seconds until melted slightly; brush over fruit.  
  4. Pipe edges with dollops of reserved cream around edges; cut each flan into 8 pieces and serve.
Tip: Garnish with fresh mint leaves, if desired.
