Creamy Lemon Schmear

Creamy Lemon Schmear
  1. Whisk together in medium bowl, 1 cup of the heavy cream, 5 egg yolks and 1/3 cup cornstarch; set aside.
  2. Stir together remaining 2 cups of heavy cream, lemon juice and sugar in 4-quart sauce pan.
  3. Bring to a gentle boil over medium heat, stirring occasionally.
  4. Slowly add egg mixture to hot cream mixture whisking constantly; cook and whisk 3-5 minutes until thickened.
  5. Pour into bowl; cool 15 minutes, cover and store in refrigerator until ready to serve.
Filling
  1. Whisk 3/4 cup heavy cream, corn syrup, brown sugar, 2 Tbsp corn starch, salt and 2 egg yolks in 2-quart saucepan.
  2. Cook over medium heat, stirring frequently, until mixture comes to a boil.
  3. Remove from heat; stir in butter and vanilla.
  4. Stir in pecans and cool at room temperature for 30 minutes.
Assembly
  1. Thaw puff pastry at room temperature until pliable but cold, approx. 15-30 minutes.
  2. Roll out each sheet on lightly floured surface to 12x16-inch rectangle; cut each sheet into 12 (4-inch) squares.
  3. Place 1 heaping #70 scoop (approx. 0.75 oz) pecan pie filling onto center of each puff pastry square.
  4. Brush edges of each square with beaten egg; fold opposite corners together to create a triangle.
  5. Dip fork in flour; press firmly along edges to seal. Place in 3 x 4 pattern on parchment-lined full sheet pans.
  6. Brush tops with remaining beaten egg; bake as directed below until golden brown. Cool completely.

Serving
  1. Sprinkle each hand pie with powdered sugar.
