Ingredients

Pesto Recipe
Basil, fresh leaves, stems removed 3.25 oz 2 cups packed
Garlic, cloves minced 1 oz 4 each
Extra virgin olive oil 4 oz 1/2 cup
Parmesan cheese, shredded 2 oz 1/2 cup
Waffle Batter
Water, cool (approx 72°F) 5 lb 10 cups
Gold Medal™ ZT Complete Buttermilk Pancake Mix 5 lb (11827) 5 lb 1 box
Eggs, whole, large 10 oz 5 each
Pesto 9 oz 1 cup
Parmesan cheese 4 oz 1 cup

Method

Pesto
1.   Combine all pesto ingredients in a food processor, pulsing to blend completely.
 
Waffles
1.   Preheat waffle iron.
2.  Pour cool water and eggs into a large mixing bowl.
3.  Add full box of pancake mix and stir with a wire whisk until no lumps remain.
4.  Stir in prepared pesto and parmesan cheese until well combined.
5.  Deposit 4 oz. (#8 scoop) of batter into the pre-heated, pre-oiled waffle iron. Set timer on iron.
  6.  Serve warm.
