1. Combine all pesto ingredients in a food processor, pulsing to blend completely.
1. Preheat waffle iron.
2. Pour cool water and eggs into a large mixing bowl.
3. Add full box of pancake mix and stir with a wire whisk until no lumps remain.
4. Stir in prepared pesto and parmesan cheese until well combined.
5. Deposit 4 oz. (#8 scoop) of batter into the pre-heated, pre-oiled waffle iron. Set timer on iron.
6. Serve warm.
