Blueberry Mostarda
  1. Combine all ingredients, except salt and pepper, in large heavy bottomed saucepan and bring to a boil.
  2. Reduce heat, and simmer, uncovered. Stir occasionally, until fruit is very soft and sauce has reduced to a jam-like consistency, approx. 1 hour.
  3. Add salt and pepper and stir to combine. Hold under refrigeration until needed.
Biscuits
  1. Add water and baking soda to a medium saucepan; bring to a boil then remove from heat and allow to cool.
  2. Dip tops of frozen biscuits into liquid with tongs; place on greased or parchment-lined half sheet pan with sides touching.
  3. Distribute salt (approx. 1/4 tsp) evenly over tops of biscuits.
  4. Bake until tops of biscuits are golden brown and bottoms are lightly browned.

*Rotate pans baked in convection oven one-half turn (180°) after 9 minutes of baking.
Assembly
  1. Split biscuits horizontally while still warm then spread 0.25 oz mayonnaise on bottom half of each biscuit.
  2. Top with 2 Tbsp arugula, 1 slice of ham, 1/2 oz cheese, 1 oz mostarda, and an additional 2 Tbsp arugula.
  3. Place top half of biscuit onto each sandwich and serve.
