A brown sugar-oat struesel tops a spectacularly moist, slightly sweet muffin.

Oatmeal Topping

Brown sugar, packed

Cinnamon, ground

Muffin Batter

Water, cool approx. 72°F

Pumpkin puree, canned

Pumpkin pie spice
3 Tbsp
Raisins, soaked, drained*
10 oz
2 cups
Oatmeal Topping
  1. Add all ingredients in mixing bowl; stir until topping is crumbly.
  2. Set aside until needed.
Batter
  1. Combine water and pumpkin in large mixing bowl; add muffin mix and spice and stir until smooth.
  2. Fold in raisins; deposit #10 scoop of batter into greased or paper-lined muffin pans.
  3. Sprinkle on 1 Tbsp Oatmeal Topping and bake as directed below; allow to cool before serving.
