Lighten up a classic! Whole-grain biscuit dough replaces the sausage as an egg-wrapper, and it's served on a bed of fresh greens.

Scotch Eggs
  1. Thaw and cover biscuit dough on parchment-lined sheet pan for at least 3 hours under refrigeration.
  2. Cut each biscuit in 3 equal parts (approximately 0.75 oz).
  3. Roll each piece on a lightly floured working surface to 1/8-inch thick. Round each biscuit piece.
  4. Dip the hard-boiled egg into water then place it over the dough.
  5. Wrap it tightly around the egg pinching the edges of the dough around.
  6. Roll with your palm on surface to even out edges and make round.
  7. Bake as directed below allow to cool and refrigerate until needed.

*Flip eggs after 5 minutes and continue baking.
Dressing
  1. Mix all the ingredients together in a large stainless steel bowl using a whisk until combined.
  2. Refrigerate until needed.
Assembly
  1. Place 1 cup of lettuce on serving plate.
  2. Shingle 2 wedges of tomatoes on the side of the lettuce.
  3. Sprinkle the top of the salad with 1 oz of the green beans and 0.5 oz of the carrots.
  4. Drizzle on approx. 0.75 oz of dressing and top with half of a scotch egg.
