  1. Mix yellow cake mix and butter in mixer bowl with paddle attachment on low speed about 2 minutes or until dough comes together.
  2. Stop mixer and scrape bowl and paddle. Mix an additional 2 minutes.
  3. Deposit dough into generously sprayed mini muffin pans using #70 scoop.
  4. Press dough evenly into bottom of muffin pan.
  5. Bake as directed below; cool 5 minutes before removing from pan (gently with small spatula or plastic knife) and cool completely at room temperature.

*Rotate pans baked in convection oven one-half turn (180°) after 3 minutes of baking.
Strawberry Yogurt Mousse
  1. Mix strawberry gelatin powder and hot water in small mixing bowl.
  2. Stir to completely dissolve. Set aside to cool 15-20 minutes.
  3. Whisk heavy cream in mixer bowl using whisk attachment on medium speed approx. 2-3 minutes.
  4. Increase mixer speed to high and whisk for an additional 30 seconds or until soft peaks are reached.
  5. Add cooled gelatin mixture to heavy cream and mix on low speed 30 seconds.
  6. Add strawberry yogurt; increase mixer speed to high, and whisk an additional 30 seconds.
  7. Place mixture in piping bag fitted with large star tip.
  8. Pipe approx. 0.75 oz yogurt mousse into each of the cooled mini tarts shells.
  9. Serve immediately, or refrigerate until ready to use.

  • Gold Medal® ZT White, Chocolate Chocolate or Devil's Food Cake Mix can be substituted for Yellow Cake Mix to create a different flavor combination.
