Water, cool approx. 72°F

Peach Butter
  1. Place ingredients in food processor and pulse until well blended.
  2. Refrigerate until chilled.
Spiced Pecans
  1. Heat skillet over medium heat and add ingredients to skillet.
  2. Toast mixture about 10 minutes, until light brown and caramelized.
  3. Remove from heat and allow to cool.
Pancakes
  1. Mix sweet potatoes, 1 lb 8 oz honey, cinnamon, nutmeg and water in mixing bowl using whisk until well blended and smooth.
  2. Add pancake mix; whisk until batter is blended and smooth.
  3. Deposit 2 oz batter onto lightly greased 375°F griddle; cook 1 1/2 minutes on each side, or until pancake turns golden brown and edges begin to dry.
  4. Serve each pancake topped with 1 Tbsp each of Peach Butter and Spiced Pecans.
