Avocado Crema

Pork roast, prepared, warm

Avocado Crema
  1. Add yoghurt, avocado, lime juice, salt, cumin and garlic powder to blender; blend until smooth, scraping sides down as needed.
  2. Refrigerate in airtight container until ready to serve.
Tostones
  1. Peel and slice plantains into 1-inch slices.
  2. Add oil to large skillet and heat over medium heat; place plantains in hot oil.
  3. Fry on both sides, approx. 2-3 minutes per side.
  4. Remove plantains from pan and place between parchment paper; use pot and press down to flatten.
  5. Return flattened plantains to hot oil and fry 1 additional minute on each side; toss with salt.
Assembly
  1. Place approx. 0.5 oz of warmed, roasted pork on top of each tostone.
  2. Drizzle with Avocado Crema and serve 2 tostones per portion immediately.

  • Tip: Top with a pineapple cucumber slaw before adding Avocado Crema for additional color and flavor if desired.
