Recipe: Bourbon Chicken and Waffle Sliders

DT’s Pub and Primetime Pizza in Fayette, Iowa, uses about 25,000 pounds of General Mills Gold Medal™ Superlative™ Bakers Flour each year for its legendary made-from-scratch pizza dough. When manager Zach Wulfekuhle decided to enter the Neighborhood to Nation Recipe Contest, he was clearly familiar with the convenience and ease of working with General Mills’ products.

Wulfekuhle’s Bourbon Chicken and Waffle Sliders are a sweet-and-savory fried chicken slider with a fried egg tucked inside, topped with a mouth-watering maple-bacon-bourbon sauce. Gold Medal™ Complete Waffle Mix is used for the just-baked waffles that hold this North Central Region winning recipe together.

He was inspired by a traditional chicken and waffles recipe that incorporated bourbon in the syrup as well as the ongoing popularity of sliders. Wulfekuhle “wanted to do something a little different with the waffle batter and peanut butter was a good addition because of the salt content. I played with the recipe a few different times to dial it in. The egg makes it kind of a brunch meal and adds some additional protein for the active person. Overall, I was very happy with how it turned out.”

Cooking definitely runs in the Wulfekuhle family. Zach’s dad purchased a bar 36 years ago, expanding it in 1999 to create DT’s Pub and Primetime Pizza, one of the few places in the area to still roll its own pizza dough. The family also owns a local sandwich shop, and Zach and his brother both started working with food as soon as they were old enough.

Many of the restaurant’s lights and decorations are collectibles acquired over the decades. Notable photos on the walls include the visiting crew of “Extreme Home Makeover” crew as well as a ticket from the 1950s when the building was a movie theater. According to Wulfekuhle, the menu is a crowd-pleasure: “People always ask me what’s good and I say, ‘Everything. And I’ve eaten it all.’”

In addition to being a long-time member of the Fayette community, DT’s Pub and Primetime Pizza gives back, donating to local athletics programs and recently helping to organize fundraising efforts for a little league baseball and softball complex.

As a Regional Recipe Winner in the Neighborhood to Nation contest, Wulfekuhle will receive $5,000 as well as $1,000 to share with a local nonprofit. He is sharing his donation with the Fayette Heritage Fund, which puts on the annual town celebration, including a parade, fireworks, softball and volleyball tournaments, and more.
