General Mills Rolls Out Expanded Team of Doughminators

Dedicated flour experts to appear at the Pizza Expo March 31-April 2.

MINNEAPOLIS (Feb. 4, 2020)—General Mills Foodservice announces it’s rolling out some new faces among its team of dedicated flour experts known as the Doughminators™ who will make their debut at the International Pizza Expo taking place March 31-April 2 in Las Vegas. Shotsie Wilson and Mike Krygier, both longtime employees of General Mills, were recently named Doughminators in recognition of their extensive knowledge of flour, baking expertise and role in helping operations overcome dough dilemmas.

While Doughminators have been a staple ingredient of the Pizza Expo for more than 25 years, Wilson and Krygier will make their first official appearance in Las Vegas in their new role. They will join Doughminators Tom Santos and Bill Weekley, other industry veterans, to conduct dough demonstrations and lead Pizza Crust Boot Camp™ sessions to help pizza makers achieve the perfect pizza crust.

“The Doughminators are well known and so respected, particularly within the pizza industry, for their role in arming operators with the knowledge and skills to dominate their dough—which is so critical when making pizza,” said Alyca Judge, senior manager of marketing communications and industry relations at General Mills Convenience and Foodservice. “We are excited to bring them back to Pizza Expo, bigger than ever, and for the new level of expertise that Shotsie and Mike bring to the team.” 

Pizza Crust Boot Camp, a highlight of the Pizza Expo, is a free seminar featuring both technical and practical information covering ingredient functionality, formulation, signature crusts, troubleshooting, and dough-making steps and methods. In addition to Pizza Crust Boot Camp, The Doughminators will host free dough demonstrations at the General Mills’ booth and be available to help operators identify the best flour type to meet their needs. 

Pizza Expo attendees who stop by the General Mills’ DOUGHMINATION STATION to learn about popular dough formulas and vote for their favorite pizza crust style will receive a free t-shirt.

Schedule of General Mills Activity at Pizza Expo:

Dough Making Demonstrations (Booth #3237):

  • Tuesday, March 31 and Wednesday, April 1: 12:00 p.m. and 1:30 p.m.
  • Thursday, April 2: 12.00 p.m.
    • The Doughminators will be available to dish about dough, conduct demos and answer questions.

Pizza Crust Boot Camp (Room TBD ):

  • Tuesday, March 31 and Wednesday, April 1: 9:30 a.m. to 11:00 a.m.
    • During Part I (technical), attendees will learn about basic dough formation along with the inter-functionality of the ingredients and applications of specialty ingredients. 
    • Tuesday, March 31 and Wednesday, April 1: 3:30-5:00 p.m.
      • Part II (practical) covers the dough-making process and discusses various dough-processing methods as well as how to make “emergency” dough.
