Chef Ted: Pancake Connections

Pancakes are personal for me. As I am writing this now I’m playing back in my mind all the wonderful family celebrations, holidays, anniversaries and how pancakes have had a part in that equation. Ahhh, the power of the golden brown and round. Let’s get started.

I have a ritual with my two sons called “Man Breakfast”. It started with my oldest son Langston, and recently we added Logan to the mix. It’s once a month on a Saturday. It’s our male bonding time where we get to create special moments, stuff our fat faces at our favorite pancake spot and most of all, NO MAMAS ALLOWED. (You may be thinking I’m wrong for that last statement, but trust me, my wife is doing the happy dance once we leave the house).

Most of the time I order the buttermilk pancakes and the boys split a stack of chocolate chip or strawberry. I’m never disappointed with what I get—and that is so important—or it kind of kills the experience for me.

Pancakes are a serious business, and consistency is the key if you want loyal and repeat customers. Whether you like ‘em light and fluffy, flat and dense, short stack or a silver dollar, they need to be the same each and every time. Your business depends on it and your customers are counting on you.
