Appalachian Stack Cookies with Kentucky Apple Butter

A twist on the traditional Appalachian stack cake, these Gold Medalâ„¢ White Cake Mix spice cookies layer five high, with a layer of fresh apple butter between the cookies. Cut into wedges, they are a delicious slice of history.

Kentucky Apple Butter - 60, 1 oz servings
  1. Combine applesauce, lemon juice and molasses in large mixing bowl; stir until well-mixed.
  2. Add remaining ingredients; stir until thoroughly combined.
  3. Divide mixture between 2 well-sprayed full sheet pans; spread evenly.
  4. Bake as directed below until most of liquid cooks out, but is still spreadable.
  5. Allow to cool and reserve 2 lb (3 1/4 cups) for recipe assembly.

*Rotate pans baked in convection oven one-half turn (180°) after 15 minutes of baking.
Cookies
  1. Cream butter and molasses in mixing bowl fitted with paddle attachment on medium speed until fluffy, approx. 3 minutes.
  2. Scrape bowl and paddle; add eggs and mix on medium speed 3 more minutes.
  3. Add cake mix, cinnamon, ginger and nutmeg; mix on low speed for 1 minute or until mixed.
  4. Deposit #30 scoops of dough on parchment-lined full sheet pan in a 3 x 5 pattern.
  5. Press dough flat to a diameter of 3-inches using floured, flat-bottomed cup; edges of dough will be uneven.
  6. Bake as directed below; allow cookies to cool completely.

Assembly
  1. Spread 1/2 oz (#70 scoop) of Kentucky Apple Butter on 4 cookies; stack into layers and top with 5th cookie.
  2. Repeat for remaining cookies; chill overnight to allow flavors to blend and moisture to soften cookies.
  3. Cut each cookie stack into 8 wedges; dust tops of each stack with powdered sugar before separating.
  4. Serve 1 wedge per portion, at room temperature.
