Devil Dog Snack Cakes

It may be the shape of a hot dog bun, but it's yummy devil's food cake filled with a rich vanilla cream.

Batter
  1. Place half of the water in mixer bowl fitted with paddle attachment.
  2. Add entire amount of cake mix and flour to mixer bowl.
  3. Mix on medium speed 2 minutes, slowly adding remaining water. Stop mixer, and scrape bowl.
  4. Mix on low speed 2 minutes.
  5. Fill pastry (using straight tip), and pipe 1 oz of batter in 3-inch strips (total of 136 strips) on greased or parchment-lined sheet pans.
  6. Bake as directed below and cool completely before assembly.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Filling
  1. Add heavy cream to mixer bowl fitted with whisk attachment.
  2. Mix on high speed until soft peaks form, approx. 2 minutes.
  3. Add vanilla icing, and mix on medium speed until combined, approx. 30 seconds.
Assembly
  1. Turn half of the completely cooled cakes over, so they lay flat side up.
  2. Fill pastry bag (using straight tip) with filling mixture; pipe 0.5 oz filling across each flipped cake.
  3. Top with remaining cakes, pressing lightly to make sandwiches.

  • For Red Devil Dogs, add 3 oz red food coloring when adding water in the batter. Drizzle icing over top for an upscale appearance, or try different flavors of icing for variety.
