Southerleigh Fine Food and Brew got creative when they moved to an all take-out menu. The 2020 Neighborhood to Nation contest winning sandwich stacked comfort foods in a Pillsbury™ Place & Bake™ Jalapeño Cheddar Scone: a battered pork chop, Cheddar cheese, and sweet twist -- simmered carameled apples, reminiscent of the classic pairings of cheddar and apple pie, and pork and apples.

Apple Caramel

Apple Caramel
  1. Cook apples in small saucepan over medium heat until softened, about 5 minutes.
  2. Stir in brown sugar and baking soda.
  3. Cook an additional 5 minutes, stirring frequently.
  4. Add heavy cream, stirring constantly about 2 minutes.
  5. Reduce heat; simmer and additional 5-7 minutes to slightly thicken.
Fried Pork
  1. Pound pork slices to 1/4-inch thick.
  2. Whisk together flour, seasoning, salt and baking soda. Set aside 1/2 cup in another bowl.
  3. To remaining flour mixture, add beer and soda water; whisk until smooth.
  4. Dredge slices in reserved flour mixture. Dip into beer batter, allowing excess to run off.
  5. Hold each pork slice with tongs, in the deep-fat fryer pre-heated 350°F until batter is partially cooked then release to continue frying.
  6. Cook 2 to 4 minutes or until golden brown and internal temp reaches 155°F.
Assembly (Made-to-Order)
  1. For each sandwich, place 1 oz cheese in mound in non-stick skillet. Cook slowly until melted.
  2. Cut warmed scone with serrated knife in half horizontally.
  3. Place Fried Pork onto bottom half; top with melted cheese.
  4. Spoon 2 Tbsp warmed Apple Caramel on top of cheese. Top with top half of scone. Secure with wooden skewer. Garnish with parsley and seasoning sprinkled on sandwich and plate.
