Diced turkey and cranberries combine in a fresh, hearty salad with apples and celery.

Ingredients

NAME WEIGHT MEASURE
Apples, red, fresh, skin-on, diced 2 lb 8 oz 8.75 cups
Juice, lemon 2 oz 1/4 cup
Celery, fresh, diced 2 lb 8 oz 11 1/2 cups
Cranberries, dried 1 lb 3 3/4 cups
Turkey, cooked, diced 6 lb 4 oz 5 quarts 1 cup
Yoplait® ParfaitPro® Low Fat Vanilla Yogurt (16632) 2 lb 8 oz 4 1/2 cups

Method

  1. Mix diced apples with lemon juice in large mixing bowl with rubber spatula.
  2. Add remaining ingredients, and mix well.
    CCP: Keep cooked turkey Yoplait® yogurt refrigerated <40°F until ready to prepare.
  3. Refrigerate until ready to serve.
    CCP: Refrigerate unused Turkey in the Orchard <40°F until ready to serve. Discard any unused Turkey in the Orchard after 2 days. 

Tips:

  1. Serve over a bed of lettuce or spinach.
  2. Top with toasted sunflower nuts.
  3. Substitute ham or chicken for the turkey.
  4. Substitute raisins for the cranberries.
