Ground Beef and Chipotle Biscuit Pupusa

Delight the crowd with this flakey, slightly crunchy biscuit Pupusa. Filled with ground beef and chilies, wrapped in biscuit dough it's great for grab and go meals!

Prep
  1. Thaw biscuit dough covered, either at room temp. 15-30 minutes until flexible, or refrigerate overnight.
Filling
  1. Heat large skillet on medium-high; add 2 Tbsp vegetable oil and garlic, cook until fragrant approx. 30-60 seconds.
  2. Add onions and peppers, cook 3-4 minutes until softened; add ground beef, chili powder, cumin, salt and pepper.
  3. Cook, stirring frequently, until beef is no longer pink; transfer to large bowl.
  4. Allow to cool slightly before adding chipotles and cheese; refrigerate until assembly.
Assembly
  1. Roll each biscuit on well-floured surface to 8-inch diameter; add approx. 1/2 cup filling to center.
  2. Gently stretch dough edges around filling and press together to seal, creating an approx. 4-inch pupusa.
Finishing
  1. Heat large skillet on medium-high; add 3 Tbsp vegetable oil and place pupusa seam side UP.
  2. Cook until golden brown and crispy on one side, about 3 minutes; transfer to parchment-lined sheet pan and place seam side DOWN.
  3. Bake as directed below until golden brown; serve with 2 Tbsp pico de gallo.
