Cut waste and use day-old croissants as your French Toast bread for this delicious breakfast panini sandwich with scrambled eggs, bacon and cheese.

Prep
  1. Use leftover croissants or bake frozen dough according to package directions and allow to cool.
  2. Slice croissants fully in half lengthwise.
Batter
  1. Add milk, eggs, vanilla extract and cinnamon to a large mixing bowl; whisk together.
  2. Dip croissant pieces in egg mixture; cook on griddle for 1-2 minutes per side.
Assembly
  1. Place 2 oz scrambled eggs on bottom croissant piece.
  2. Layer on 4 half slices of bacon and 1 slice American cheese; add top piece of croissant.
  3. Place sandwich on preheated panini press and close for 1-2 minutes; transfer to 450°F oven for 1-2 minutes until ingredients are heated through.

  • Prepare French Toast Croissant pieces in advance and refrigerate or freeze and thaw until needed. Smear you favorite aioli for new flavor combinations if desired. Note nutrition information may change.
