Pineapple fresh, peeled & cored, 1/2-inch half moon slices

Assembly
  1. Combine refrigerated coconut milk and brown sugar in a small bowl; pour into greased 2-inch half hotel pan.
  2. Sprinkle shredded coconut evenly then place pineapple half-moon slices in a single layer over top.
  3. Place frozen cinnamon rolls in a 5 by 3 pattern, spacing evenly; bake as directed until golden brown.

Finishing
  1. Release rolls by inverting pan immediately upon removing from oven onto parchment-lined sheet pan.
  2. Rearrange pineapple slices as needed and pour remaining caramel sauce over top; serve warm.

  • Serve rolls with a garnish of grilled or dried pineapple, coconut whipped cream and toasted coconut if desired. Note nutrition information will change.
