A blast from the past, complete with crushed pineapple and maraschino cherries, is a retro favorite. Make it in a steam table pan or as layers.

To Prepare Steam Table Pans

Pineapple slices, canned, well drained

Walnuts, chopped

Maraschino cherries, drained

To Prepare Batter

Water, cool approx. 72°F

Pan Prep
  1. Drizzle 1 cup melted butter into each of 3 full steam table pans.
  2. Evenly distribute 2 cups brown sugar and approx. 4 cups (2 lb) pineapple.
  3. Sprinkle on 3/4 cup of walnuts and 1 cup cherries; set aside.
Batter
  1. Pour half of the water in mixer bowl fitted with paddle attachment; add cake mix.
  2. Mix on medium speed 2 minutes; add remaining water gradually while mixing on low speed.
  3. Stop mixer, scrape bowl and paddle; mix batter on low speed 2 minutes.
  4. Deposit 2 lb 13 oz batter into each pan and spread evenly.
  5. Bake as directed below; allow to cool 5 minutes in pans, loosen sides and invert to cool completely.
