Fresh-grated potatoes added to a complete pancake mix with some chopped onion turn out crisp, savory, irresistible potato pancakes.

  1. Whisk together water and pancake mix in mixing bowl until batter is blended and smooth. DO NOT OVERMIX.
  2. Fold in potatoes and onions; deposit #20 scoop of batter onto preheated griddle set at 375°F.
  3. Cook 1-2 minutes on each side or until pancake turns golden brown and edges begin to dry.

  • Serve with low-fat sour cream and chives or unsweetened applesauce if desired.
