Sprouted Sunflower "Cheddar Cheese"

Miso paste, nutritional yeast and sassy spices blended with sunflower seeds create a vegan version of a cheesy spread.

Spanish paprika, smoked

Garlic powder
1 tsp
Turmeric, ground

Advanced Prep
  1. Place filtered water, sunflower seeds and sea salt in 1-quart bowl; cover and soak for 8-24 hours at room temp.
  2. Pour off liquid holding seeds back with strainer; add several inches of fresh water to cover.
  3. Remove skins by rubbing seeds between palms of hands, skins will float a bit; pour through strainer, holding back seeds the best you can.
  4. Add fresh water to cover and rub seeds again; repeat as desired to remove more skins and improved texture and color.
  5. Cover and refrigerate drained seeds if not ready to use; seeds are good for 2 days if rinsed and drained daily.
Cheese Procedure
  1. Place prepared seeds and miso paste in food processor; process until smooth.
  2. Add lemon juice, nutritional yeast, jalapeño pepper, only 1/2 tsp coarse sea salt, and remaining spices and seasonings.
  3. Process until smooth and taste for saltiness adding remaining salt as needed.
  4. Blend until mixture is desired consistency; if necessary, thin with filtered water 1 Tbsp at a time or to thicken drain in cheesecloth-lined colander for several hours under refrigeration.
  5. Scrape seed cheese into bowl or individual ramekins; garnish with remaining sea salt, cover and refrigerate.
  6. Allow cheese to ripen 1-2 days under refrigeration for flavors to blend; when serving allow to warm up for 20-30 minutes at room temperature.
