Strawberry Beet Cooler

Strawberry yogurt, beets and pineapple juice. This unusual trio combines to bring a fruit and veggie boost to a refreshing beverage that's a win/win for all.

Servings: 16 servings (1 serving = 1 - 9 oz cooler)

Sliced beets, cooked, chilled

Pineapple juice, canned, unsweetened, chilled

  1. Add beets and 2 cups pineapple juice to a large capacity blender or food processor (prepare in batches as needed).
  2. Blend on high speed for 1 minute; stop blender and scrape sides.
  3. Continue blending until mixture is smooth; transfer to 2 gallon or larger container.
  4. Add yogurt and whisk thoroughly; add remaining 6 cups pineapple juice and whisk until fully incorporated.
  5. Pour 9 oz into serving cups and cover; serve immediately or refrigerate and serve within 72 hours.

  • Freeze portions, then hold under refrigeration overnight for a slushy consistency at service, if desired.
