Inspired by Viet-Cajun crawfish, this croissant sandwich fuses those flavors with easy to cook shrimp and fresh veggies.

Prep
  1. Bake croissants as indicated on package; allow to cool for 1 hour.
  2. Slice cooled croissants in half, lengthwise.
Viet-Cajun Mayonnaise
  1. Combine mayonnaise and fish sauce in a medium bowl; cover and refrigerate until needed.
Shrimp
  1. Melt butter in a large sauté pan over medium heat; add lemongrass and garlic the cook until beginning to brown.
  2. Increase heat to high and stir in shrimp; cook 5-7 minutes, stirring often, until beginning to brown on edges.
  3. Stir in fish sauce and seasoning; bring to a boil and cook 1-2 minutes longer, until shrimp is cooked through and sauce is thickened.
Assembly
  1. Open croissant and smear 1 1/2 tsp Viet-Cajun Mayonnaise on each inside half; toast on grill or under broiler, approx. 1 minute.
  2. Place 3 slices of tomato on bottom half of croissant; top with 1/4 cup lettuce, 2 Tbsp shredded carrots and 2 tsp slices of radish.
  3. Add 8 shrimp pieces, 4 tsp cilantro leaves and the croissant top.
  4. Secure with sandwich pick and serve immediately.
