Bacon Bourbon Jam
  1. Cook diced bacon in large sauté pan over medium high heat, stirring occasionally, until crisp, about 15-20 minutes.
  2. Transfer cooked bacon to a medium bowl lined with paper towels.
  3. Remove most of the bacon fat from sauté pan, reserving 2 Tbsp for cooking onions.
  4. Add onions to sauté pan and cook until softened, about 5 minutes.
  5. Add bourbon and cook until reduced to a jam-like consistency, approx. 3-4 minutes.
  6. Add maple syrup, brown sugar, lemon juice, soy sauce and Worcestershire sauce; continue cooking for 3-4 minutes to create a thick glaze.
  7. Add cooked bacon and thyme. Stir to combine. Remove from heat and set aside.
Biscuits
  1. Place frozen biscuit dough on greased or parchment-lined half sheet pan with sides touching.
  2. Bake until tops are golden brown and bottoms are lightly browned. Keep warm.

Burgers
  1. Cook burgers on flat top grill set to 375°F until browned on both sides and cooked through to an internal temperature of 165°F, about 7-9 minutes.
  2. Top each burger with 1 slice of cheese and continue cooking for 1 minute, until cheese is melted.
Assembly
  1. Split warm biscuits in half horizontally; place 1 lettuce leaf on bottom of each biscuit, top with 2 half slices of bacon and 1 burger.
  2. Top with 1 oz Bacon Bourbon Jam and place top half of biscuit onto each sandwich.
